Fiestas Patrias commemorates the great struggles for freedom that led to independence in M}xico and several countries in Latin America. This year marks the 32nd successive year that Fiestas Patrias has been celebrated at the Seattle Center, and for nearly a decade in SeattleÕs South Park neighborhood.
In the same way that U.S. residents cel- ebrate the 4th of July, Mexico and several Latin American countries celebrate their independence in the month of September. These countries include Costa Rica, Nica- ragua, Honduras, El Salvador, Guatemala, and Chile.
In 2009 and 2010, M}xico, Chile, Bo- livia, Colombia, Venezuela, and Argen- tina observe bicentennial celebrations of independence. In Mexico, Fiestas Patrias marks the anniversary of ÒEl Grito de Dolores,Ó the historical moment on September 16, 1810, when Padre Miguel Hidalgo y Cos- tilla proclaimed independence from the ÒNew SpainÓ in Dolores, ... more.
Guanajuato. By ringing the bells of his church that night of September 16, Padre Hidalgo y Costilla called his parishioners to join together to bring an end to SpainÕs despotic rule over M}xico and Latin America.
Other notable leaders and crusaders for independence emerged. For example, in Venezuela, a Creole aristocrat, Francisco de Miranda, was the precursor of inde- pendence. His ideas were soon taken up by Sim 4n Bol 9var, the great Venezuelan liberator.
This young aristocrat from Cara- cas joined Miranda, leading to VenezuelaÕs independence in 1811. Bol 9var expressed their ideals in his famous Letter of Jamaica in 1815, saying: ÒWe are not Indians, not Europeans, but a species halfway between the legitimate owners of the coun- try and the Spanish usurpers. In sum, since we are Ameri- cans by birth and our rights those of Eu- rope, we have to dis- pute those rights with those of the country and maintain our- selves in it against the invasion of the invaders.
Thus, we Cnd ourselves in the more extraordinary and complicated situ- ation.Ó Years later, Bol 9var defeated the Span- iards in Colombia and PerS. Chile ofCcially won its independence in 1818, when Jos} de San Mart 9n y OÕHiggins defeated the Spaniards in Santiago. Argentina, formerly Virreynato of R 9o de la Plata, proclaimed its inde- pendence on May 25, 1810.
Paraguay declared its independence from Buenos Aires about this time, and Jos} Gervacio Artigas began his liberation movement in Uruguay which led to its independence in 1816.Thus, Mexico and the countries of Latin and South America are joined not only by a com- mon language, but also by revolutionary histories. Yet each country is unique, as are their traditions and customs. Sea MarÕs Fiestas Patrias helps main- tain a bond with our neighbors and relatives to the South by celebrating the determination and courage of great lead- ers and the sovereignty of nations.
In so doing, each year we are reminded that the spirit of freedom is indomitable. W ith his family members falling victim to diabetes, Ramiro Rubio assumed it was just a matter of time when he would become diabetic due to his age, my fam- ily history, and his weight.
Rubio is owner of Galerias Gourmet Mexican Restaurant, located on Capitol Hill in Seattle. 20, 1978 3 Oct. 24, 1842 community. He understood that two contributing factors to the high prevalence of diabetes in the Latino community were unhealthy eating habits and limited knowl- edge about this life-long disease.
Ramiro had a vision to promote healthy eating by offering a menu of lighter choic- es, host educational events and groups around diabetes, and to encourage other Latino restaurant owners to take action. However, he needed some help. To make his vision a reality, Ramiro sought assistance from health organiza- tions in King County, including, Sea Mar Community Health Centers, American Diabetes Association, Seattle and King County Public Health, and the Racial and Ethnic Approaches to Community Health (REACH) Coalition of King County.
Health educators from these organiza- tions provided Ramiro diabetes education and offered recommendations to make his menu healthier. Ramiro then created an alternate menu that offers lighter, healthi- er eating choices, but without compromis- ing taste. According to Mark Johnson of the American Diabetes Association, out of every two Latino children born today could face a life with diabetes if current trends continue.
Johnson said, ÒRamiro has taken a bold step by offering ÔlighterÕ menu choices that offer the traditional Davors of Mexican food, while also of - fering foods higher in Cber and vitamins that are also lower in carbohydrates and calories. This food not only tastes amaz- ing and is presented beautifully, but it is a great Crst step in helping in the Cght to prevent diabetes.Ó The new menu items engage all the senses. The wonderful aroma and colors of the chicken with cilantro in orange sauce, distinct Davor of the shrimp and roasted poblano pesto, and texture of the jicama and cucumber salad dishes are visually pleasing, awaken the taste buds, and ignite the sense of smell for a holistic food experience.
The healthier menu options were featured at Galerias through the end of August. Each entr}e was accompanied by a choice of soup or salad and a side dish. The most popular dishes from this special menu are now included in GaleriasÕ per- manent menu.
